  • 2 tablespoons oil
  • 2 eggs
  • ½ cup onion
  • ½ cup carrots
  • ½ cup peas
  • 2 cups cooked rice
  • ½ cup wine or stock
  • 2 tablespoons butter
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon mirin
  • ½ teaspoon garlic paste
  • 1 teaspoon ginger paste

Preparation

    1. Heat oil in a large skillet over medium heat. Sear chicken on both sides, cover and cook until internal temperature reaches 165°F, about 15-20 minutes. Remove chicken from skillet, keeping warm.
    2. Deglaze the skillet with wine/stock or water. Scrape the bottom of the skillet with a spoon to loosen food particles. Pour in the sauce add the carrots and onion, cover, and cook until tender. Push the vegetables to one side and pour the eggs on the empty side and slowly whisk them into the vegetables until cooked to a scramble.
    3. Stir in the rice and coat thoroughly. Add the chicken and enjoy!
