Asian Chicken Salad

Ingredients

  • 1 package Spicy Asian Marinated Chicken Thighs
  • 2 heads of Green leaf lettuce or 3 heads Romaine, chopped
  • Vinaigrette (recipe below)
  • 2 cups shredded red cabbage
  • 1 ½ cups crispy wonton strips
  • 1 cup mandarin oranges
  • 1 cup roasted cashews
  • 1 cup matchstick carrots (or 1 large carrot shredded)
  • 1 red bell pepper, thinly sliced
  • 1 avocado, sliced

For the Vinaigrette

  • 3 tablespoons olive oil
  • 3 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 1/2 teaspoons honey
  • 1 teaspoon soy sauce
  • ¼ teaspoon granulated garlic
  • 1 tablespoon sesame seeds

Preparation

    1. Cook chicken thighs as desired (i.e. saute, bake, or grill) according to package directions and slice.
    2. Divide lettuce between four bowls and top with red cabbage, wonton strips, mandarin oranges, cashews, carrots, pepper, and avocado.  Drizzle with vinaigrette.

    For the Vinaigrette

    1. Vigorously whisk all ingredients in a small bowl (or shake ingredients together in a covered mason jar).
