Ingredients
2 lbs. Georges Farmers Market® boneless, skinless chicken breasts
Greek Marinade
4-6 Pita Bread rounds
2 Tbsp. Olive Oil
1/2 Cup Tzatziki Sauce (recipe below)
1 Lg. Red Onion cut in to thin strips (julienned)
2 Cups Shredded Lettuce
1 Lg. Tomato thinly sliced
Tzatziki Sauce
1 med. cucumber, peeled, sliced in half, seeded, finely chopped
1 cup plain yogurt
1 Tbsp. olive oil
1 tsp. lemon juice or white wine vinegar
1/2 tsp. salt
1 tsp. dill
1 clove garlic, minced
1/2 tsp. Essence Seasoning Blend (recipe below)
Essence Seasoning Blend
2 1/2 Tbsp. Paprika
2 Tbsp. Salt
2 Tbsp. Garlic Powder
1 Tbsp. Black Pepper
1 Tbsp. Onion Powder
1 Tbsp. Cayenne Pepper
1 Tbsp. Dried Leaf Oregano
1 Tbsp. Dried Thyme

Preparation
Marinate the chicken breast for at least 1 1/2 hours. Discard excess marinade. Preheat the oven to 250°. Cut the chicken into bite sized pieces. Cook the chicken in a skillet with the olive oil. Place each pita bread directly on the oven racks. Heat until warm. Cook the chicken until the internal temperature reaches 170°. Serve the chicken on top of the pita bread. Serve with Tzatziki sauce, shredded lettuce, red onions, and tomatoes.
